LA CUCINA
Barbara Aimi and Aldo Boselli enjoy revisiting the old recipes of our territory. Thanks to excellent local artesans and manufacturers, we have access to an excellent selection of ingredients, from fresh and cured meats to the best dairy products. The menu is influenced by the seasons, especially where vegetables and fruits from our own garden are concerned, as well as seasonal products like ‘cotechino’ and ‘mariola’, which are available only at a certain time of the year.
A special menu has been inspired by the dishes mentioned in the tales of Peppone and Don Camillo: Onion Frittata, Culatello, Lasagne with Bolognese Sauce…. all laced with a good glass of Lambrusco.
Hostaria's historical dishes, which have been served since the opening: fried 'tosone', mixed pickled garden vegetables, braided ravioli filled with dandelion, honey and ricotta cheese, twice braised beef cheek, roasted duck, old style sabayon...
